Brewed with very rare Sake rice called ‘Aiyama’ (愛山), only few sake producers are allowed to use this variety. Having structural body, this sake is sharp and edgy with great balance of acidity, Umami and sweetness. Pear on the nose with mint and white flower notes. Long and refreshing finish.
About Nanbu Bijin The brewery was established in 1902, and the Nanbu Bijin brand name came to be in 1951. The area where the brewery is located used to be called Nanbu ("the Southern area"). The place is rich with nature, abundant water and fertile soil. In Japan, most breweries of the time produced rough, inelegant, sweet sake, but this brewery wanted to make clean and beautiful sake like a fair Southern maiden. Hence, the name Nanbu Bijin (which stands for "Southern Beauty"). -
